Almond Coated Chicken Nibbles

1255203_10151825147948812_207892892_nI made this last night and actually cannot believe I’ve never tried this before. This beats KFC any day, make it for the kids, make it for lunch, just make it! Its paleo, low carb, whole food, weight loss friendly, gluten and dairy free and just plain yummy!


600gm of chicken thighs

Three handfuls of raw almonds (about 3-4 cups)

2 eggs roughly beaten with a fork

Some corn flour (optional)

2 large pinches of ground chilli

1 teaspoon of ground cumin

2-3 tablespoons of good salt

A bit of oil


Pre-heat oven to 180°C.

Put almonds in a blender and blend roughly. Mine were a mixture of finely ground to slithers of almonds so no need to be too fussy.

Chop chicken into bite size pieces (think chicken nuggets).

Place blended almonds on a large plate and mix in spices and salt.

Put flour and egg on separate plates/bowls.

Dip chicken piece by piece into the flour, then the egg, then the almond mixture.

Put a splash of oil on a fry pan, then quickly cook chicken until the almonds become a crust.

Pop in the oven for 10 minutes or until chicken is cooked through.

Serve with salad, roasted vegetable chips or as an entrée with a dipping sauce.
