I got this recipe from a nutritionist I went to uni with and since then it has been a staple in my house. 1-2 are a great snack to give you a quick boost on the run, but make a plate full of them for desert, put some garnish on it and you’ll be getting compliments all night.
1 cup dates
1/4 cup walnuts
1/2 cap raw almonds
2 Tbsp cocoa
1/2 tsp ground ginger
1/2 tsp ground cinnamon
3-4 Tbsp desicated coconut (extra for coating them)
Splash vanilla essence
1 Tbsp agave nectar
1/2 tsp guar gum mixed with 2 tbsp water
Method: Blend dates, walnuts and almonds until fine. Transfer to a bowl and mix in with all other ingredients except the guar gum. Next mix the guar gum and water until it resembles a paste, then mix in a table spoon at a time until the mixture is just sticky enough that it will bind. Finally roll into balls, as you roll coat them in more coconut. The trick is to keep your hands damp. Pop in a container and keep in the freezer.
