Crustless Quiche

This can be made dairy and/or gluten free easily by either leaving out the cheese and/or using a flour substitute. Mine is generally both and it still tastes delicious, but for those of you who are not digestively challenged you can just follow this recipe.


3 eggs

1/2 cup self raising flour

1 1/2 cups of milk or milk substitute (I use oat)

1 cup of grated cheese

1 onion finely chopped

1-2 cloves of crushed garlic

1-2 cups of vegetables e.g. sliced mushrooms, grated zuchinni, sliced tomatoe, diced capsicum, left over roasted vegetables, brocolli or spinach.

1 teaspoon of your favourite spices, e.g. tumeric and chilli

Cooked bacon or fish (optional)

Method: Quickly cook onion in a frying pan until clear and add garlic for a minute to soften. Lightly beat eggs and milk together, then add the cheese, flour, onion and vegetables, spices and  salt and pepper to taste. Mix well and put into a greased baking dish. Bake at 180 degrees for 30 minutes or until golden and set.
