Paleo Muffin

EggMuffins-1Make these in a muffin tin for a quick bite on the go, they’re perfect for a meal with salad or as a snack.

Ingredients 

½ cup bacon/tuna/salmon/lentils/protein of your choice – optional

13 eggs 

¼ cup semi dried or sun dried tomatoes 

Fresh herbs of your choice

salt and pepper to taste

Method: Preheat oven to 180 degrees C. If using bacon cut up small and fry until crispy. In a bowl scramble the eggs and season with salt and pepper. Grease a muffin tin and put the fillings in the bottom, e.g. bacon, a sprinkling of herbs, some sun dried tomato. Then pour over the scramble eggs almost to the top. Cook for 15, take out and rest for 15 minutes and eat.
