Fruit and Nut Dairy Free Ice Cream

SONY DSCOk so despite the fact that this is all natural and raw food, it’s still pretty high in sugar, so best not go eating this every day. But for a treat I think it’s pretty good. I stumbled on this after trying another recipe which didn’t work for me, so I kept adding to it and this is what I got. I love it but haven’t been able to try it out on my partner as he doesn’t like banana’s, so give it a try and let me know what you think.


1 frozen banana (chopped prior to freezing)

2 fresh ripe bananas

1 tsp cinnamon powder

2 tsp vanilla essence

¼ cup oat/almond/rice milk

3 Tbsp thick coconut cream (not one with water added, I use the Ayam brand for its consistency)

½ – ¾ cup raw almonds

5-6 pitted dates

Method: Put dates and amonds in the blender and blend until chunky. They don’t have to be fine, it’s quite nice having different sized pieces. Take out and set aside

Next put the ripe bananas, cinnamon powder, vanilla essence and oat milk in and blend until smooth. A splash of agave nectar could work nicely too.

Add the frozen banana pieces and blend.

Finally add the coconut cream and date and almond mixture and blend until mixed.

You can eat it like this, or pop it back into the freezer to allow it to freeze a bit more. There are so many things you can do with the base of bananas and coconut cream so get creative, the next one I’m trying is choc mint, I’ll keep you updated.
