Moroccan Chicken Kebabs

These are really good for lunches or dinner, or even breakfast if you’re feeling brave. They’re easy to make and you can add some vegies on there to make a complete snack.


4 tablespoons of oil

A good handful of fresh parsley

2 cloves of garlic

1 teaspoon of paprika

2 teaspoons of cumin powder

Zest of 2 lemons

Juice of 2 lemons

2-3 chicken breasts

Method: Blend together all ingredients except chicken to make a marinade. Cut chicken up into bite size peices, cover in marinade and leave covered in the fridge for at least 30 minutes but up to 12 hours. Put chicken on skewers (I pre-soak mine but this is not essential) and either bake or fry until cooked through which takes about 20-30 minutes. Enjoy with salad or steamed veg x
