1-2 cups of pumpkin cut into cubes
2-3 carrots cut into cubes
1 red capsicum cut into strips
1 cloves of garlic roughly chopped
3-4 cups of rocket
¼ cup olive oil
½ tsp cumin
½ tsp coriander
A small pinch of chilli powder
½ tsp paprika
½ a lemon zested and juiced
Put pumpkin and carrot in the over at 180 degress to roast. Once they’re almost ready sprinkle over the garlic and the capsicum. Cook until all veg are done. Take out and allow to cool.
Get dressing ready by mixing all dressing ingredients together. Once veg are cooled add to the dressing and rocket and toss.
This is great as left overs with a tin of tuna also.
