500g free range pork mince
1 Tbsp each of chilli sauce, sesame oil, fresh ginger minced, soy sauce
1/4 cup oyster sauce
2 spring onions, thinly sliced
320g water chestnuts, rinsed and thinly sliced
1/4 cup cashews or peanuts
2 carrots peeled and grated
2 Tbsp of fresh in season herbs
10-12 crunchy green lettuce leaves, seperated and washed.
Method – Combine mince, chilli sauce, sesame oil and root ginger. Stand in the fridge for 5 minutes or up to 8 hours. Head a wok or large fry pan and fry pork misture until just brown, then add soy sauce and cook until well browned. Mix in oyster sauce and remove from heat. Mix water chestnuts, spring onions, nuts, carrot and herbs through the meat mixture. Use the lettuce leaves to make a cup and fill with mixture, then roll and eat. 2-3 cups usually makes a meal for one. Warning this can be a bit messy when you eat it, but it tastes great.
