Sarah’s Curry

This is a really basic curry, however it’s full of great herbs and spices including turmeric. It can be cooked on the stove top or you could do it in the slow cooker, just use half the water and cook on low.


500g of beef, chicken or lamb chopped into cubes

2 potatoes, chopped into cubes

2 carrots, chopped into cubes

2 sticks of celery, roughly chopped

Frozen or fresh spinach

1 large onion, diced finely

3 cloves of garlic, crushed

3 teaspoons of curry powder

1 teaspoon each of cumin, coriander and turmeric powder

1 can of good quality coconut cream

Salt and pepper

Method: Heat fry pan with a bit of oil and fry onion and garlic until soft.

Add the meat and brown, turn heat down then add all the spices and some pepper to cover the meat.

Next add all the vegetables except spinach and pour enough water over the mixture until it 1/2 coats it. Simmer for 20 minutes

Add coconut cream and a good sprinkling of salt and bring to the boil. Once boiling turn down so it’s just simmering.

Cook at a low temperature until meat and vegetables are cooked stirring occasionally to prevent sticking. Add the spinach 10 minutes before it’s done.

I used beef and I cooked it on low for about an hour. The longer you cook it, the more tender the meat. Serve with brown rice, quinoa or have it by itself. Enjoy x
