The Best Lentil Soup

lentil soupThis is actually one of the best lentil soups I’ve every tasted, it’s fresh and full of flavour. For vegetarians leave out the sausage and use veg stock instead.


1 lg onion finely diced                         2 carrots peeled and finely chopped

1/4 cup tomato paste                           2 tsp smoked paprika

2 large cloves of garlic, crushed        120g kransky sausage diced

2 1/2 litres chicken stock                   2 cans (800g) crushed tomatoes

2 cups brown lentils, washed            2 bay leaves

1 fresh lemon                                        Chopped fresh coriander


In a large pot gently fry the onion and carrot until soft. Add tomato paste, garlic, paprika and diced sausage and stir over heat for another minute. Add chicken stock, tomatoes, bay leaves and lentils. Simmer gently until the lentils are very soft which takes about 1-1 1/2 hours. Season to taste and serve with a squeeze of fresh lemon juice and the fresh coriander mixed in. For the extra put in tuperware and freeze, it tastes just as good after freezing. Enjoy x
