Zuchinni (1-2 per person)
Plain table salt
Method: Slice zuchinni into long thin strips like spaghetti. Put in a colander and cover liberally with salt to drain the moisture. Leave for 20-30 minutes then rinse thoroughly with water to remove salt. Give it a light fry in a pan for a few minutes to warm up and put pasta sauce on top.
