I made these delicious vegie fritters yesterday, served them with left over coleslaw from the previous night with some fresh shredded lettuce mixed in. Now this is a bit rough as I just made it up as I went but really you can put whatever you want in them and you can’t really go wrong.
2 cups of grated vegetables (I used sweet potato, a carrot, and a zucchini which I put in a clean tea towel and squeezed to remove some of the water)
1 tsp of ground cumin
½ tsp ground turmeric
A good pinch of chilli
1-2 Tbsp of roughly chopped dill (or whatever herbs you have lying around)
4 small cloves (or 2 medium) of garlic, finely chopped
1 Tbsp of salt
Pepper to season
Put it all in a bowl and mix together.
Heat a fry pan on medium heat with a small amount of coconut oil (or butter if your fine with dairy).
Ladle in about 1 tablespoon at a time to make small to medium patties.
Lightly fry for around five minutes or until golden, then flip and do the other side. Serve warm or cold.
